My homemade spinach pesto
I usually grow a lot of spinach in my garden, and I often use some of it for my homemade spinach pesto. So much better than the regular pesto from the store!
- 7 oz (200 g) fresh spinach
- 4 garlic cloves
- 1 1/4 cups (around 3 dl) pumpkin seeds or sunflower seeds
- 1 1/4- 1 3/4 (around 3-4 dl) matured cheese
- a little bit less than 1/2 cup (around 1 dl) olive oil
I'm not too fussed about using a specific recipe when I make pesto. Instead, I just take a little of everything I have at home. I usually make a large batch of pesto that I freeze in smaller packages. Pasta pesto is one of my favorite easy-to-make meals, especially if you can just take it out of the freezer anytime.
Blend the ingredients until smooth.
Season with a little salt, or add a little bit of oil or water to change the texture.
