My kids' favorites: Potato and chive pancakes

In my mind, there's nothing wrong with eating pancakes for dinner! I made potato and chive pancakes today.

Ingredients
  • 4 eggs
  • 1 3/4 cups (around 4 dl) flour
  • 3 1/3 cups (around 8 dl) milk
  • 1 lb (500 g) peeled potatoes
  • a bundle of chives

We eat some type of pancakes here at home once a week. It might seem like a lot to some of you, but the kids love it. I can make so many variations simply by adding fresh vegetables from the garden to the mix too! That's why I decided to make these potato and chive pancakes today.

Instructions:

Make a batter from the eggs, flour, and milk.
Peel and grate the potatoes. Squeeze to remove some of the liquid.
Put the grated potatoes in the pancake batter and stir with a spoon.
Chop the chives and add them to the batter.
Pan-fry the potato pancakes in butter.
Melt butter and pour on top of the stack of pancakes.

Serve your potato and chive pancakes with lingonberry jam and a mixed salad.
