Royal sweet bread with fruit and seeds

This sweet and tasty bread is such a treat, especially with some nice cheese and a cup of tea!

Ingredients
  • 1 cup (around 2 dl) of sunflower seeds
  • 2/3 cup (1,5 dl) dried fruits or berries
  • 2/3 cup (1,5 dl) cracked rye or similar
  • 1 3/4 cups (4 dl) of graham flour
  • 3 1/2 cups (8 dl) of wheat flour
  • 1 tbsp of salt
  • 1 tbsp baking soda
  • 3 1/2 cups (8 dl) sour milk
  • a little bit more than 3/4 cups (2 dl) of syrup

I had this wonderful bread at the castle Teleborg close to where I live and I just had to ask them for the recipe. They gave me a recipe for 20 large loaves but I changed it to a more manageable 2 loaf recipe. This is a sweet bread filled with fruits and berries from the garden. It tastes great with some cheese and a cup of tea.

Instructions:

Mix all of the dry ingredients in a bowl.
Add the sour milk and the syrup. The mixture will be very loose, not at all like a dough.
Put the batter in two greased bread tins.
Bake in 350 degrees (175 degrees Celsius) for 50 minutes.
Let the bread rest for a little while before you eat it.

You can change up this recipe quite a lot depending on what you have available at home. You can for example use other seeds or fruits. I like making this bread with dried apple pieces, dried blackcurrants and raisins, but you could do without the fruit and berries too of course. Use some flax seeds or pumpkin seeds instead.
