Stewed fruit and berries

You can make delicious stewed fruit and berries from fresh or frozen produce, I like using what I can from my kitchen garden of course.

Ingredients
  • 2 1/2 cups (around 600 g) berries and/or sliced fruit
  • a little bit less than 1 cup (around 2 dl) water
  • 2-3 tbsp potato starch
  • a few tbsp sugar
  • cinnamon, vanilla or citrus zest

The smell of stewed fruit and berries just reminds me of my grandmother's kitchen. We picked fresh currants and strawberries that my grandmother stewed into pure magic. We always had some kind of dessert after dinner, and this was definitely my favorite. I liked it best when it was still slightly warm, served with milk and crushed crispbread on top. Yum!

You can make this dish with frozen berries and fruits too of course.

Instructions:

Peel and slice fruit and/or rinse berries. Put them in a pot with the water and sugar.
Boil until soft.
Taste the mix and add more sugar if necessary.
Dissolve the potato starch in a little water and pour the mix into the pot.
Bring to a boil and then put the stewed fruit and berries in a pre-warmed bowl.
Add a little sugar on top.

Serve with crispbread crumbs, cereal or chopped nuts. I decided to serve my stewed strawberries with milk and almond flakes.
