Dill-stewed potatoes with cured salmon

There's nothing better than being able to eat your own homegrown potatoes in winter. Simply stew them and eat with cured salmon. Try this recipe for dill-stewed potatoes. Delicious!

Ingredients
  • potatoes
  • butter
  • milk
  • wheat flour
  • chopped dill, frozen or fresh
  • salt
  • white pepper
  • cured salmon

Potatoes are such a great resource in winter. Dill-stewed potatoes with cured salmon are such a festive yet simple dish. Especially if you buy your cured salmon at the supermarket. You can, of course, cure your own salmon too if you want.

Instructions:

Peel and boil the potatoes. Be careful while boiling, so that the potatoes don't fall apart. Try using firm potato varieties.
Pour the water out and let your potatoes rest in a bowl.
Melt butter in a pot and add a little wheat flour.
Dilute with milk as you go along. Use around 2 tablespoons of wheat flour for 2 cups (around 5 dl) milk.
Let the sauce simmer for a bit and season with salt and white pepper.
Cut the potatoes into wedges and put the pieces in the sauce.
Warm the potatoes and add chopped dill.

Serve your dill-stewed potatoes with cured salmon and seasonal vegetables. Enjoy!
